Enjoy your very own eggs Benedict at home. Even better, hollandaise sauce is versatile and can be used in a variety of breakfast dishes, and also pairs well with green vegetables, fish, steak and roast beef.

Ingredients

  • 3 large egg yolks
  • ¼ c. water
  • 2 Tbsp. fresh lemon juice
  • ½ c. (1 stick) butter
  • ¼ tsp. salt
  • ⅛ tsp. sweet paprika
  • Dash of pepper to taste

Directions

  1. Whisk egg yolks, water and lemon juice in small saucepan until blended. Cook over very low heat, stirring constantly until mixture bubbles at the edges.
  2. Stir in butter (1 tbsp. at a time) until melted and sauce is thickened. Remove from heat immediately
  3. Stir in salt, paprika and pepper. Serve immediately & enjoy!
